Supper In a Pumpkin
- 1 teaspoon Salt
- 1 teaspoon Pepper
- ¼ teaspoon Nutmeg
- 1 ½ Pounds of Sausage
- 1 Cup Chopped Onion
- 1 Cup Cooked Rice
- 1 Cup Dried Cranberries
- ½ Cup Chopped Walnuts
- 3 Ears Fresh Corn
- ½ Cup Seasoned Bread Crumbs
- 2 Eggs
- ½ Cup Fresh Sage (chopped)
- 2 small pumpkins
Pre-heat oven to 350 degrees. In a large bowl, combine rice, onions, cranberries, walnuts, corn (cut off of the cob) and bread crumbs. Place sausage in food processor and chop fine, then add seasoning. Combine sausage mixture into large bowl. Incorporate eggs, sage and chill. Cut top off of the pumpkins and clean out pulp and seeds (save seeds if desired). Fill pumpkins with stuffing and replace top.
Place stuffed pumpkins in pan with water and bake for 2 hours, or until stuffing reaches 165 degrees. Cool for 10 minutes, cut and serve.
